Recipe: Red Velvet Cupcake with Cream Cheese Frosting

Finally, I baked with the help of my little assistant, Megan (:

Red Velvet Cupcakes:

125 grams self raising flour
1/4 teaspoon salt
10 grams of cocoa powder
57 grams of unsalted butter, at room temperature
150 grams of granulated white sugar
1 large egg
1/2 teaspoon pure vanilla extract
120 ml of buttermilk
1 tablespoon liquid red food coloring
1/2 teaspoon white distilled vinegar
1/2 teaspoon baking soda

Cream Cheese Frosting:

113 grams cream cheese, room temperature
57 grams of unsalted butter, at room temperature
1/4 teaspoon pure vanilla extract
30 grams of powdered sugar, sifted

This recipe makes 12 cupcakes.

The ingredients :D
Before you start mixing the ingredients, preheat your oven to 350 degrees F (175 degrees C).

#1. First, sift the flour, cocoa powder and salt together in a big bowl. Then put it aside.

#2. In the bowl of your electric mixer, beat the butter until soft for about 1-2 minutes.

#3. Add the sugar slowly and beat until light and fluffy for about 2-3 minutes.

#4. Add in the egg and beat until incorporated.

#5. Add the vanilla extract and beat until combined. Instead of using pure vanilla extract, I actually used vanilla essence, which is actually the same thing.

#6. You will have something like this in the end and put it aside.

#7. For the buttermilk, you can make it homemade by just mixing 120ml of milk with a tablespoon of white distilled vinegar but I used rice vinegar instead of white distilled vinegar.

#8. Add in a tablespoon of liquid red colouring into the buttermilk and whisk it.

#9. So when you have all the flour mixture and buttermilk ready, with the mixer on low speed, alternately add the flour mixture and buttermilk to the butter mixture, in three additions beginning and ending with flour. Remember; flour, buttermilk, flour.


#10. Mix it all well and you will have something that look like this.

#11. Now, in a small cup combine the vinegar and baking soda.

#12. Allow the mixture to fizz and then quickly fold into the cake batter.

#13. Working quickly, divide the batter evenly among the 12 cupcakes cups and smooth the tops with an offset spatula or the back of a spoon. Got Megan to help me in filling up those cupcakes cup (:



#14. Turns out that the batter was only enough for 8 cups, maybe my cupcakes was a bit taller or bigger. Anyways, bake those cuppies in the preheated oven for approximately 25 to 30minutes.

#15. Moving on to the frosting, beat the cream cheese and butter together until smooth.

#16. Gradually add in the powdered sugar and continue to beat it until smooth.

#17. Lastly, add the vanilla essence and mix it well. Chill them in the frigde before applying on the cupcakes.


#18. Cool the cakes in their pans for 10 minutes and make sure they are completely cool before frosting.

#19. You can insert a toothpick to check if they are cooked inside, or else you have to put them back in the oven and bake for a few minutes more.

#21. Now this is the fun part where you can start piping the frosting and decorate the cuppies just the way you want it to be!

#22. You can even sprinkle some leftover cake crumbles like how I did :D



I'm still a beginner in baking so bear with my ugly decorations :P This is was first ever successful baking experience as well, tried baking macarons but they turned out to be macawrongs instead ): Mum said it was okay but the red colouring freaked her out! Be sure to be careful when putting this recipe together as the batter can stain, I even got a chair stained (OOPS!)  If you haven't had it before, red velvet is like yellow cake but with a little kiss on the cheek of chocolate. The cake goes really well with the cream cheese frosting and I think it's best to eat them together. Definitely, a plus for Valentine's Day or special important occasions!

Not recommend-able to those who are on strict diet, cause trust me, these little devils are deadly fattening! HAHA and maybe for those who dislike colourings as well.

But still, happy baking and OM NOM NOM-ing them!
